How would you go about changing that add.html so as to have a staggered input.

You would have the first five input field on the add page 1, then user prompted to page two, that contains the last five fields to complete the submission etc.

Yep...and what you need to do is adapt Add Confirmation Mod listed in the Resource Center to have additional sub-forms in the add.cgi script.
