The same regular expression codes can be used in DBMAN SQL that you are using in the valid expression column for fields in question.
And, what the heck is big5??

It's not only showing one more field in the admin.cgi, but actually converts all category-names to names that can use also non-english characters. In other words, with this mod you can show up categories also using characters being used in Chinese, but not in English. Me for example, I can now use the German character Ä (<-- Hope that character is being shown correctly for you, for me it is. Depends on this forum-script).
Whatever big5 chinese is, most probably it will be working with the non-english mod. So if you installed it succesfully, you should be able to show up categories in Chinese as well...
Did you get what you have to do with the new non-english field? Try and enter the categorie's name in Chinese in it and see what happens after rebuilding.

The link non-eng version has installeb.
However it is add one more field to display.
We want change the perl code to support the
chinese big5 code (isa-8859-1).

i am the other user of big5(chinese) mod..
i have install your non-english(german)mod.and try to run
by enter category name but nph-build.cgi answer me is invalid format of category name..........?????
