When editing a link throught the category browser - The expiry date instructions say we can enter the date like yyyy-mm-dd, but anytime I do that, I get an error indicating the field can not contain the value.

If I change it to yyyy/mm/dd then it works. Nitpicky I know, but annoying as I often need to set an expiry date based on the add or modify date and add 1 year - ie, cut and paste and modify always causes the error.

Thanks for reporting that. It looks like it broke quite a while ago :). It will be fixed in the next release.
