I was wondering what the difference is with:
'Contact Name' and 'Contact Email' in the links.def ... as to why the have '' and the rest of the fields do not ?

The reason these two items are surrounded by single quotes (' ') is because they are multi-word field names that contain an embedded space whereas, all the other field names are single words.
