If you're hosting GM on a windows server, how are the messages retrieved and delivered (without cron jobs)?

If you're using the catch-all mode, then you'll need some way of running a script to check the catchall account for emails on a regular basis (ie. some cron daemon). To send bounces, and forwards in this mode, you'll also need to run a separate script.

So, I'm guessing if you want to host Gossamer Mail on Windows, it needs to be a dedicated server.

Not necessarily. As long as you have some way of running the scripts on a regular basis. I'm not quite sure how ISP's setup a shared windows server, but you would probably have to get your ISP to add the scripts to a cron like daemon (so I'd say it's really dependent on your ISP).
