Does anyone know which script(s) or files I would need to modify to get rid of the category stats on the category pages?

For example, I would want the categories that now look like:

Category One (50)
Category Two (12)
etc.

To look like

Category One
Category Two
etc.

So I just want to stop the display of the number of links which is shown in parentheses. It doesn't look like you can do that on the category.html template...

Any ideas?

It's in the "subcategory.html" template file. Just open that up and you can do anything you want to make the Categories Link look better.
