I was thinking if below would be possible:

While deleting the listing, adding the Name of the category in which the listings was submitted.

So when the person receives the email with the info that their listing was deleted, I would also like to send them all other info such as Title, URL, Description and all other, so if they wish to resubmit, they just need to update the mistake and copy-paste rest.
