Once of my categories (which was displaying 0) is now showing -1 links as the <%Number_of_Links%> variable. I tried doing a rebuild and then building the site again but it is still there.

Try

Database, Repair Tables

Then Rebuild the pages

That usually works for me.

Thank you for responding but I had already tried that. While it had fixed one error it didn't do this.

Alex kindly went in and indicated it was a somewhat complicated fix but it is done now. If we could only figure out WHY it happened in the first place (especially since I have never attempted to edit the database manually) we would all be happier!

For future reference, anyone else getting this error should contact support directly.

No reason. I just wondered if this was a problem in 2.1.0 or a previous version. If it is a bug, I wish Alex would post the fix in the new Offical Bug forum...
