I know of scripts that create PDF files on the server side, so I was wondering if anyone knew of a script that lets you create Excel and/or Word Files on the server side?

I don't know of any scripts, but there is a module available at CPAN for excel: http://search.cpan.org/search?mode=module&query=excel

Actually, there is an add-on for DBMAN called the Excel Export Mod or something like that. It basically involves changing the Content/Type of the output.
Or using the module that Mark linked is probably the most efficient in terms of data processing.
