Crag Anthill has a nice detail page set up on one of his sites (sorry Craig-don't remember which site).
In order to add additional information to the page, you'll need to:
1) add a new category to your database.
2) add a field on the add form for user to submit a review
3) add the field to your detailed page layout
Obviously, this is the short answer of how to do this!
