While I'm familiar with baysin filtering, I've never actually used it, so I'm afraid I can't comment too much.

I have used SpamAssassin extensively and it does a very good job at catching spam. I get around 150-200 spam a day that goes straight into my spam folder. It can also be enhanced to work with real time blackhole lists if so desired.
