This seems like a trivial question to me, but I cannot find the answer in the admin help pages nor in this forum, so here I go:

Where can I find a list of tags that I can use in my templates?

Furthermore, is there documentation about how to write templates (except for the excellent template syntax manual)? I would like to know things like what the URLs of to link to specific pages and how the engine knows which template to use for each request.
