In one particular category, I'd like to have the threads initially sorted alphabetically rather than by most-recent-post (it's going to be a dictionary that users can add to).

Apologies if I'm missing something really obvious, but where is the default set? I'm looking at the forum_view template and see loop post_loop, but I'm getting stuck there, I guess...
