How secure is mail sent with Gossamer mail? And are there ways of making it more secure?

Yep...use Secure Socket Layers (SSL) and you could probably install PGP (Pretty Good Privacy) package in your sendmail server to encrypt data transmissions.

Out-of-the-box, data is transmitted as plain text like another "sendmail" type of application.
