When I create a category the system automatically
creates a folder by the same name. Is it possible for
the link and the folder to have different names? How
can I do it?

You can do this by setting the build_directory_field in admin->setup->Build Options. Try searching for build_directory_field in the forum or looking in the docs for more information.
