Hi,
another question for the forum.
Can I give to the Categories a Order according my point view and none like example alphatecial order?

See Setup > Build Option > build_sort_order_category

but where can I find the meaning of the follow build_sort_order_category command:
1. isNew DESC
2. Title
3. isPopular DESC

isNew, Title and isPopular are your column names and ASC is ascending and DESC is descending.

So:

Title DESC

...will sort categories in reverse alphabetical order from Z to A

I can sort categories by priorities?
Is possible to give priorities to the category?

I red, I don't remember wher Has_priorities in build_sort_order_category field
