Does this mean it's impossible for anybody to ever see these fields?
It means that the administrator only has permissions to edit that field. The user can see the value of the field, but they cannot modify that field. Very useful for the $db_key field like ID.

how safe is it??
Relatively safe...everything is relative. If you do not add the SPAMBUSTER MOD or other MODs to check the refering page, then someone could copy the form and then add data from their web sites even hidden fields apply.

Can important data be stored in a safe way?..
If you password protect the directory where your data is stored, then your data will be relatively safe. There are Perl codes that encrypts data, however, in terms of de-crypting it to see the values in plain text is a bit tricky.

Can you tell me if there is a way to store data which partly is pubicly available and partly isn't (in a safe way)???

I just did. Use the admin permission for fields that you only want the admin to add. Then password protect the directory where your database file is located...best method is to use .htaccess/.htpasswd.
