I'm getting tons of bounces like:

Giving up on 213.165.64.100.

....and it is getting really annoying when I have about 50 of them in my admin mail box.

Currently I have qmail setup so that mailer-daemon passes its mail to my admin email address.

What would be the best way to stop that happening?.....should I just stop it being sent to me and let it build up or can I safely send it to /dev/null or something?

You can 'safely' send anything to /dev/null. There is no best practice. It's up to you. Do you want a log history of the messages so you can go through them on a periodic basis to check that you don't miss anything important? Or not.

Personally, I'd keep them.

What I would do is edit:

/var/qmail/control/doublebounce

and set it to 'doublebounce'. That way doublebounces will go to doublebounce@yourdomain.com that you can either read, ignore, or have qmail drop completely by putting an empty .qmail-doubleboucne file.
