Override camera application ?

Is there a simple/recommended way of overriding the camera application, like
temporarily disabling the auto-launch on cover open, or launching a different
app ? I'm talking about civilized, intended ways of doing this, not by
butchering startup scripts :) There were hints on irc that some gconf magic
could be used, but nothing more substantial and guick grepping on camera did
not yield substantial results.
