I was using the 'Search Only This Category' mod for Links 1.1, which does not work with Links 2.0. Can someone enlighten me on how $db_single_category works and how to set it up in site_html.pl.

Look to the files of Language Links 1b1

I've done there most of the mods for links 1.1 and much more very usefull stuff.
